Long time no sew. Or any other crafting posts for that matter. Don't worry, they not far off. They just need photographing. Anyway, hungry for a FILLING salad? I know you are, you’re always moaning about your weight. Everyone does. And yet salad leaves me blasé at best. Well except for this one.
Ella’s Lemon Tuna Salad
You’ll need:
2 eggs
2 potatoes
Green beans
Leafy salad mix, washed
1 tin of lemon pepper tuna (If you don’t want tuna in oil, tuna in spring water will do for a healthy alternative – just remember to add pepper to serve)
1 cucumber, thinly sliced
Hard boil the eggs and then remove from saucepan.
Boil potatoes until soft, and steam green beans.
This can be done at the same time by placing the beans in a saucepan insert to catch the steam from the boiling potatoes, or you can place them in a microwave proof container with a bit of water and send them round in the microwave.
Peel the egg shell off the eggs and slice. Cut the potato up into cubes. Drain beans and place aside.
Line a large bowl with the green salad mix, and cucumber strips. Add beans and stir together.
Add eggs, potato and tuna to the top of the salad.
Eat with pleasure and be full.
